We understand that there's been 3-7 inches of snow in Crookston with more yet falling.  So hard to believe when it's so beautiful here in Boulder City.  House sitter tells me that Mocha just loved running through the snow and she dips her nose down and tries to throw a handful of snow into the air repeatedly.   We are working today till 3pm.  Then off to see Hoover Dam and then into the city.

Each time telling us he'd only be a moment.  Then as we were talking about his job he went out of his way to tell us we were doing some things wrong at our company.  Did I mention he was legally blind?  And this was a computer/customer service job?  So we didn't hire him, and then he pulled the "your just not hiring me because I'm blind card!"  We responded back to him that, NO we would have tried to make accommodations for your disability, we didn't hire you because YOU ARE A JERK!  AHHH the fun of employment!

2 lbs. top round, sliced 1/4 inch thick x 6 x 3 inches
6 dill pickles, slivered
1/2 lb. bacon slices
2 sm. onions, slivered
Mustard of choice
Spread mustard on sliced meat. Lay slice of bacon on length of meat. Place a slivered pickle and onion piece on one end of meat and roll tight. Insert toothpicks to hold roll. Use deep skillet or deep frying pan. Sear on two sides to brown. Add hot water to mid height of meat rolls. Reduce heat. Simmer, covered for 3/4 to 1 hour.

Today we had 3 busy segments.   Fencebuilder Jan and I went around Berlin getting my Christmas presents that I need for my German kids and Friends.  Then I had a wonderful dinner with Ilona and Peter Kraft (parents of a student that was hosted by a friend) and then late into the evening talking to Henry, my #1 foreign student son.  It's been so much fun surprising my kids!  More on that later.

CZECK DUCK Pecena Kachna  Recipe 
1 5-pound duck
1/2 teaspoon caraway seeds (a bit more if you like)
salt to taste
2 cups water

Clean and wash duck. Sprinkle with salt and caraway seeds inside and out. Pour 1 cup water into roasting pan, put in duck breast down, cover and roast in a 350 degree oven for 1-1/2 to 2 hours. Turn duck and roast, uncovered, for about another hour. During roasting, pierce skin several times, skim off excess fat, and add more water as needed.
