BUYERS BEWARE, here's a new scam...check it out...short story is that you
order something from an amazon type company, where you found a great deal.
(Remember the $50.00 Cadillac?) They cancel the deal with amazon, amazon
sends you an email saying sorry that
email@example.com was unable to complete the order. THIS IS WHERE THE
SCAM STARTS! SO you send an inquiry email and they got you. They
tell you that the deal is still avaliable BUT that they can't bill through
Amazon (or similar) and that you need to just wire them the money.
Well it's such a good deal that you get caught up in it and send them the
cash. YOU WILL NEVER GET YOUR PRODUCT!

March 17, 2009 You might think it's the
wearing of the green, BUT St. Patrick's color is BLUE
The reason the Irish celebrate St. Patrick's Day is
that this is when St.
Patrick drove the Norwegians out of Ireland. It seems
that some centuries
ago, many Norwegians came to Ireland to escape the

Norwegians were eating almost all the fish caught in
the area, leaving the Irish with
nothing to eat but potatoes. St. Patrick, taking
matters into his own

Secretly, he organized the Irish IRATRION (Irish
Republican Army to Rid
Ireland of Norwegians) Irish members of IRATRION
passed a law in Ireland
that prohibited merchants from selling ice boxes or

in hopes that their fish would spoil. This would force
the Norwegians to
flee to a colder climate where their fish would keep.
Well, the fish spoiled, all right, but the Norwegians,

So they all got in their boats and emigrated to
Minnesota or the
Dakotas--the only other paradise on earth where smelly
fish, old potatoes,
and plenty of cold weather can be found in abundance.

TIME TO START KEEPING SCORE WITH THE OBAMAMETER! WILL HE BECOME THE
Pasta Bolognese.Prep Time: 45 min Inactive Prep Time: hr min Cook Time: 4 hr
30 min Serves: 6 to 8 servings.
1 large onion or 2 small, cut into 1-inch dice
2 large carrots, cut into 1/2-inch dice
3 ribs celery, cut into 1-inch dice
4 cloves garlic
Extra-virgin olive oil, for the pan
3 pounds ground chuck, brisket or round or combination
2 cups tomato paste
3 cups hearty red wine
3 bay leaves
1 bunch thyme, tied in a bundle
1 pound spaghetti
1/2 cup grated Parmigiano-Reggiano
High quality extra-virgin olive oil, for finishing
In a food processor, puree onion, carrots, celery, and garlic into a coarse
paste. In a large pan over medium heat, coat pan with oil. Add the pureed
veggies and season generously with salt. Bring the pan to a medium-high heat
and cook until all the water has evaporated and they become nice and brown,
stirring frequently, about 15 to 20 minutes. Be patient, this is where the
big flavors develop.
Add the ground beef and season again generously with
salt. BROWN THE BEEF! Brown food tastes good. Don't rush this step. Cook
another 15 to 20 minutes.
Add the tomato paste and cook until brown about 4 to 5 minutes. Add the red
wine. Cook until the wine has reduced by half, another 4 to 5 minutes.
Add water to the pan until the water is about 1 inch above the meat. Toss in
the bay leaves and the bundle of thyme and stir to combine everything. Bring
to a boil and reduce to a simmer, stirring occasionally. As the water
evaporates you will gradually need to add more, about 2 to 3 cups at a time.
Don't be shy about adding water during the cooking process, you can always
cook it out. This is a game of reduce and add more water. This is where big
rich flavors develop. If you try to add all the water in the beginning you
will have boiled meat sauce rather than a rich, thick meaty sauce. Stir and
TASTE frequently. Season with salt, if needed (you probably will). Simmer
for 3 1/2 to 4 hours.
During the last 30 minutes of cooking, bring a large pot of water to a boil
over high heat to cook the spaghetti. Pasta water should ALWAYS be well
salted. Salty as the ocean! TASTE IT! If your pasta water is under seasoned
it doesn't matter how good your sauce is, your complete dish will always
taste under seasoned. When the water is at a rolling boil add the spaghetti
and cook for 1 minute less than it calls for on the package. Reserve 1/2 cup
of the pasta cooking water.
While the pasta is cooking remove 1/2 of the ragu from the pot and reserve.
Drain the pasta and add to the pot with the remaining ragu. Stir or toss the
pasta to coat with the sauce. Add some of the reserved sauce, if needed, to
make it about an even ratio between pasta and sauce. Add the reserved pasta
cooking water and cook the pasta and sauce together over a medium heat until
the water has reduced. Turn off the heat and give a big sprinkle of
Parmigiano and a generous drizzle of the high quality finishing olive oil.
Toss or stir vigorously. Divide the pasta and sauce into serving bowls or 1
big pasta bowl. Top with remaining grated Parmigiano. Serve immediately.

Kim from Sanders 1907 (
http://sanders1907.com ) and I entered a Goose Cooking contest in the
fall of 2003. This is the Recipe he came up with that WON US FIRST PRIZE!!
- 2lb Goose Breast in large Chunks
- 1 tbsp Oil
- 2 tbsp Plain Flour
- 1 Garlic Clove, finely chopped
- Bouquet garni
- Salt and Black Pepper
- 6oz Button Onions
- 4oz Button Mushrooms
- 2oz Butter
For the marinade
- 1 Onion, chopped
- 1 Carrot, sliced
- 1 Clove, crushed
- 4 Peppercorns, crushed
- 3 tbsp Oil
- 1 Bottle Red Wine
Place the marinade ingredients in a large bowl together with the
chopped onion, carrots and goose. Mix well and leave to marinate for at
least 2 hours.
Remove the meat from the marinade with a slotted spoon and pat dry
with kitchen paper. Strain the marinade and reserve.
Heat the oil in a large pan until very hot, add the goose and
gently brown on all sides.
Add the garlic, sprinkle with flour and cook over a high heat for a
couple of minutes, stirring constantly.
Add the reserved marinade, enough stock to cover the goose, bouquet
garni, salt and pepper. Cover and simmer for 1 and 3/4 hours.
Meanwhile, melt the butter in a frying pan, add the onions and
mushrooms and sauté until lightly browned.
Add the mushrooms and onions to the goose after the initial cooking
time, mix well and continue to cook for a further 15 minutes. Serve hot.
